Since I love a good Caesar salad, I thought I’d try a fun recipe twist and created this keto Caesar coleslaw! We combine a coleslaw mix with an awesome homemade creamy Caesar dressing and some fresh Parmesan to make this amazing salad. This is an awesome side dish I hope you’ll enjoy as much as we do.

I love to make almost everything homemade, so I know exactly what goes into my dishes. Sometimes it’s fun to shred up a bunch of cabbage for coleslaw. But it’s also a quick and convenient option to buy pre-made mixes. Generally, because of their carb count, I don’t add carrots to dishes. But coleslaw mixes that add a little shredded carrots are one of my exceptions to the rule. These mixes add very little carrots, and the carb count remains low. The fun part of making your own coleslaw mix is that you can make it your own by using the exact amounts of green and red cabbage you’d like. You can also choose to add a little grated carrot or leave it out.
How do I make the dressing for this keto Caesar coleslaw?
The dressing for this salad is a homemade creamy Caesar dressing. I have a go-to recipe for my favorite keto Caesar salad, and only had to make a few simple modifications to make the dressing for this coleslaw. We start with hard-boiled egg yolks. Some prefer to use raw egg yolks, but I like to use cooked egg yolks for my Caesar dressing. We then add keto mayonnaise, lemon juice, white wine vinegar, and garlic. I used fresh lemon juice, but you can use bottled if you’d like. One of the key ingredients in this dish is the anchovy paste. It adds amazing flavor and creates the perfect flavor profile for our dressing. We add a little Dijon mustard, keto sugar, salt, and pepper to give our coleslaw even more amazing flavor. Olive oil and freshly shredded Parmesan cheese add both flavor and texture to our dressing.
How can I serve this keto Caesar coleslaw?
This coleslaw pairs nicely with any number of keto main dishes. You can serve it as a side for burgers, sausages, keto sandwiches, and wraps. It makes for a great addition to pulled pork or pulled chicken. One of our favorite dishes is keto root beer bbq pulled pork and it would make an awesome side for that. You can also serve this coleslaw with grilled meats including grilled beef, chicken, pork, and seafood. Add this coleslaw to your favorite chili or stew to make for an extra special meal! We also like to add coleslaw to holiday meals and to parties and get togethers, as it is always a welcomed addition!

Keto Caesar Coleslaw
This keto Caesar coleslaw takes a classic salad and incorporates it into an amazingly delicious and zesty coleslaw! Yum!
Ingredients
- 16 ounce bag coleslaw
- 2 hard boiled egg yolks
- ¼ cup keto mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 2 garlic cloves, minced
- 2 teaspoons anchovy paste
- 1 teaspoon Dijon mustard
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ⅓ cup olive oil
- ½ cup fresh shredded Parmesan cheese
- Optional: top with fresh shaved Parmesan cheese
Instructions
1. In a large bowl, add coleslaw mix. Cut or tear up any large pieces. Set aside.
2. Combine egg yolks, mayonnaise, lemon juice, white wine vinegar, garlic, anchovy paste, mustard, sugar, salt, and pepper in a food processor. Process until creamy and smooth. Slowly add olive oil and process until mixed. Alternately, in a medium sized bowl, whisk together all ingredients except for the olive oil. Whisk until creamy and smooth. Add the olive oil and whisk until combined.
3. Pour dressing over coleslaw mix. Stir to combine.
4. Stir in shredded Parmesan.
5. Refrigerate 30-60 minutes or overnight before serving.
6. Top with fresh shaved Parmesan cheese if desired.
