I’m so excited to share this keto cauliflower coleslaw recipe with you! I had a bag of coleslaw mix in the refrigerator just waiting to be used. Then as I was walking around the grocery store, I saw a beautiful little head of cauliflower in the produce department and knew I wanted to combine the two. The addition of some crispy bacon, cubed cheese, and creamy dressing came together to create an awesomely delicious salad that exceeded my expectations. Cauliflower is a great food choice when following a low carb and keto plan. It is nutrient rich. Cauliflower contains antioxidants, choline, folate, manganese, magnesium, niacin, phosphorus, and vitamins B, C, and K. It is a low-calorie food but is a good source of fiber. And one cup of cauliflower only contains about 2 net grams of carbs. A couple other great things about cauliflower is that it can be eaten raw or cooked and can be made in any variety of ways. You can boil, roast, saute, or steam it and use it in recipes in place of pasta, potatoes, or rice. And since cauliflower has a mild and fairly neutral taste, it nicely takes on the flavors of the sauces, spices, and other ingredients you combine with it.
What kind of coleslaw should I use for this keto cauliflower coleslaw salad?
You can use either a pre-made coleslaw mix or you can make your own. If buying a mix, I always check my nutrition labels to make sure I know exactly what is in the mix and I check the net carb count. Most bagged mixes contain green and red cabbage and carrots. There is only a small amount of shredded carrots, so the carb count remains low. If you’d like, you can shred your own cabbage and make your own mix. You can then choose to add some shredded carrots or even some finely sliced radishes to your mix. I’m thinking my next coleslaw recipe might just contain some Brussels sprouts and kohlrabi!😊

Keto Cauliflower Coleslaw
This keto cauliflower coleslaw is perfectly creamy, crunchy, and delicious. The addition of bacon and cheese takes this salad over the top!
Ingredients
- 16 ounce bag coleslaw
- 2 cups chopped cauliflower
- 4 slices bacon, fried and crumbled
- 1 cup cubed cheddar cheese
- 1 tablespoon diced red onion
- ½ cup keto mayonnaise
- ¼ cup sour cream
- 1 teaspoon apple cider vinegar
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large bowl, add coleslaw mix. Cut or tear up any large pieces. Add cauliflower, bacon, cheese, and onion. Stir to combine.
2. In a small mixing bowl, add remaining ingredients. Stir to combine.
3. Pour mayonnaise mixture over coleslaw mixture. Toss to combine.
4. Refrigerate 2-4 hours or overnight before serving.
