Let’s talk about our salad ingredients!
We combine just a few simple yet delicious ingredients to make this salad! We start with a large head of fresh cauliflower. You’ll want to cut your cauliflower into bite sized pieces for this salad. Since this is a crunchy salad, there is no need to cook the cauliflower. To our cauliflower, we add diced red onion. I love the color and flavor that this brings to our salad. If you’d prefer, you can substitute with a white or yellow onion. We then add fried and crumbled bacon. For a pretty presentation, you can make some extra bacon and top your salad with it! I love adding fresh grated Parmesan cheese to all kinds of dishes; but for this salad we’re adding freshly shredded Parmesan cheese. I used a box grater and used the largest hole grater to grate my cheese.
How do I make the dressing for this keto cauliflower Parmesan salad?
The dressing for this salad comes together quickly and easily, yet is amazingly creamy and delicious! We start by combining keto mayonnaise with sour cream to create the creamy base for this salad. My go-to mayonnaise is the Chosen Foods brand avocado oil mayonnaise, but you can use your favorite or can easily make homemade keto mayonnaise. To our mayo and sour cream, we add keto granulated sugar. I used the Swerve brand of sugar as it contains zero calories and zero net carbs. It’s also amazingly similar in its sweetness level to regular sugar. To balance out our flavors and to add the perfect level of acidity, we add apple cider vinegar. If you’d like, you can substitute with white wine vinegar. We then simply add salt and pepper to perfectly season our dressing. You can give your dressing a taste and add even more salt to taste.
