For our thickener, we add xanthan gum. You can omit this, just know your soup won’t be quite as thick. It might seem crazy to add chopped lettuce and tomatoes to this soup, but it totally works! The lettuce adds texture to the soup, and the tomatoes add texture and great flavor. For cheese, I recommend using a block of cheese and shredding it yourself. The result is a shredded cheese which tastes great and melts incredibly well.

You have some amazing ways to make this soup your own based upon your taste preferences! If you’d like, you can add some minced garlic to your soup to add a garlicky element. Keto Cheeseburger Soup
This keto cheeseburger soup is a fun and delicious soup. And, yes, we even add lettuce and tomatoes!
Ingredients
- 2 tablespoons butter
- 1 cup chopped onions
- 1½ pounds ground beef
- 4 cups chicken broth
- 2 cups heavy whipping cream
- 1 tablespoon yellow mustard
- 1 teaspoon xanthan gum
- 3 cups chopped iceberg lettuce
- 1 cup chopped tomatoes
- 4 cups shredded cheddar cheese
Instructions
1. In a large stockpot, over medium high heat, saute onions in butter for 5 minutes. Decrease heat to medium and saute 5 additional minutes.
2. While onions are cooking, in a large skillet over medium high heat, cook ground beef until no longer pink. Break it into small pieces as it cooks. Drain well.
3. Add ground beef, chicken broth, heavy whipping cream, and mustard to stockpot. Stir to combine.
4. Simmer for 15 minutes.
5. Sprinkle xanthan gum over soup. Whisk in to combine. Simmer for 5 minutes.
6. Add lettuce and tomatoes. Simmer for 5 additional minutes.
7. Add shredded cheese, one cup at a time, allowing cheese to melt after each addition.
