Vegetables do not have to be boring! Broccoli and cauliflower are great keto vegetable choices. This recipe takes them to a new level! First you add bacon, which is always a good thing!😊Then you make a rich, creamy, cheesy, and perfectly seasoned sauce. This creates a casserole that is sure to impress. This casserole is quick and easy enough to make for everyday meals. It is also rich and delicious enough to make for guests or for holiday meals.
What is the best way to cook the broccoli and cauliflower?
You can steam the vegetables until fork tender. You can also microwave the vegetables. Just add a little water and microwave until fork tender. If you use the second option, make sure you drain the water from the vegetables before making the casserole. I used fresh vegetables for this casserole. You can use frozen vegetables as well.
Can I use any other cheeses for this recipe?
I love the combination of swiss and sharp white cheddar cheese in this recipe. I added the yellow cheddar cheese for a touch of color!🧀 You can use any number of cheeses in this dish. You can use mild, medium, or sharp cheddar cheese. You could also use mozzarella or provolone if you’d prefer. Gouda would be a fun choice as well. I grew up on a small dairy farm in Wisconsin. We raised and milked Holstein cows. Our milk went directly to the local cheese factory. I think I got spoiled with great cheese! To this day, I enjoy learning and experimenting with cheeses and I hope you enjoy the combination of cheeses in this recipe as well!

Wow, this was a GREAT recipe! I brought it for Christmas to a group of keto/non-keto eaters, and EVERYBODY loved it. I had less than one serving to take home. Will make this again many times!
