Let’s talk about our chicken and green beans!
You have quite a few options for what kind of chicken you use for this casserole. Cooked chicken breasts are a great choice. The nutritional information provided was calculated using chicken breasts. If you’d like, you could use chicken thighs instead. You can also use a combination of white and dark meat. A quick, easy, and delicious option is to use a rotisserie chicken. I also like to cook a whole chicken, then use the meat in dishes like this casserole. For your green beans, you can use either fresh or frozen beans. I used regular string beans and cut them in half. Depending on the size of your beans, you may want to cut some of yours into thirds. I just like the beans to be cut into similar sized pieces.
When making the sauce for this keto cheesy chicken and green bean casserole, how do you make it rich and creamy and keep it low carb and keto?
There are a few things we do with our sauce to make it incredibly rich and delicious while also keeping it keto. First, we use an amazing combination of ingredients to make our sauce especially creamy. We combine cream cheese, heavy whipping cream, and sour cream in our sauce. All three are great keto choices and create an incredibly rich, creamy, and delicious sauce! We also add chicken broth, garlic powder, paprika, salt, and pepper. These give our sauce great flavor and help to keep the carb count low. The final ingredient we add to our sauce is shredded cheese. This adds to the richness and creaminess of our sauce without adding many carbs. For the shredded cheese, I recommend buying blocks of cheese and shredding them yourself.🧀This way, you’ll know there are no added ingredients. It is also is superior in taste and melts better than pre-shredded cheese.
How can I serve this keto cheesy chicken and green bean casserole?
This is a filling dish which can be served as a meal in itself. If you’d like, you could serve this with a salad or a keto soup.
