We combine an awesome combination of fresh vegetables for this delicious soup. These include red peppers, celery, onion, and cauliflower. These are all great low carb vegetable options, and they give our soup great flavor. If you’d like, you can use green peppers or a combination of green and red peppers for your soup. For the onion, either yellow or white onions work well. Cauliflower gives our soup amazing flavor and texture. Cauliflower is a low calorie and low carb food which is also rich in nutrients. It contains antioxidants, choline, folate, magnesium, manganese, niacin, phosphorus, and vitamins B, C, and K. It also provides a good source of fiber. One cup of cauliflower contains about 2 net grams of carbs, so it is one of the best keto vegetable options.

Keto Chicken Bacon Cabbage Soup
This keto chicken bacon cabbage soup is a delicious and low carb soup. You can have this on your table in less than an hour so you can enjoy this on even your busiest of days!
Ingredients
- 8 ounces raw bacon, diced
- 1 medium red pepper, diced
- ½ cup diced celery
- ⅓ cup diced onion
- 3 cups chopped cauliflower, about 10 ounces
- 20 ounces green cabbage, thinly sliced
- 12 ounces red cabbage, thinly sliced
- 4 cups chicken broth
- 4 cups vegetable broth, divided
- 2 tablespoons tomato paste
- 4 cups cooked and chopped chicken
- 2 tablespoons Dijon mustard
- 2 tablespoons tamari
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- Optional: top with chopped parsley if desired
Instructions
1. In a large stockpot, over medium high heat, cook bacon until desired crispness. Do not drain grease. With a slotted spoon, remove bacon to a plate and set aside.
2. To the stockpot, add diced peppers, celery, and onion. Saute in bacon grease until vegetables start to soften, 4-5 minutes.
3. Add cauliflower and stir to combine. Add green and red cabbage, chicken broth, and 3 cups vegetable broth.
4. In a small bowl, add remaining 1 cup vegetable broth and tomato paste. Stir or whisk until tomato paste is dissolved. Add to stockpot.
5. Add bacon, chicken, mustard, tamari, Italian seasoning, garlic powder, and pepper. Stir to combine.
6. Increase heat to high and bring to a boil. Decrease heat to medium and simmer until cauliflower is fork tender.
7. Top with fresh chopped parsley if desired.

Loved it! Very different flavors than I’ve been using in Keto soups. I had to improvise and substitute a few things due to not having them on hand.
Tomato paste = sugar free ketchup
Celery = two jalapeños (with seeds, we like it spicy)
Red cabbage = more green cabbage
Then added grated Parmesan when served, because it was just a bit too spicy.
I really appreciate this recipe. Took me out of my comfort zone and inspired me to use different spices and condiments in my soups for future. I will be making this again, by popular demand, but I’m going to do it true to the recipe next time.
