I chose to use boneless and skinless chicken breasts for my stroganoff. Often, I’ll buy a large package of chicken breasts and simply boil them until done, and then chop or shred them. Sometimes I’ll season them with some salt and pepper and bake them. But I like having cooked chicken in the refrigerator as it comes in handy for so many recipes. You can use any chicken you’d like. Rotisserie chicken is a great quick option as well. For my bacon, I used thick sliced bacon. When buying, I always check to make sure the bacon has zero carbs. You can use thin or thick sliced bacon for this dish.
What other ingredients go into this delicious keto chicken bacon stroganoff?
One key thing I’ve learned about keto cooking is you don’t have to add large quantities of things such as onions and garlic to achieve awesome flavor. We use just ¼ cup diced onions and 2 cloves of minced garlic in this dish. This provides incredible flavor and helps to limit the carbs in the dish. A combination of chicken broth and sour cream help to give the sauce richness and great flavor. I’ve added parsley for the flavor and color it brings to this dish. For seasoning, a little paprika, salt, and pepper are all we use. I love the color and flavor the paprika brings to the sauce. Xanthan gum is the main thickener for this sauce. You can omit this ingredient, but your sauce will be a bit thinner.😉
How can I serve this keto chicken bacon stroganoff?
This dish is rich and thick and can be eaten as is! It is filling all on its own! You could also serve this over some cooked cauliflower rice. You can make your own cauliflower rice by finely chopping cauliflower or by pulsing it in a food processor. I like to have some frozen cauliflower rice waiting for recipes like this one. Another option is to use your favorite keto noodles and top them with the stroganoff. I love shirataki noodles. Shirataki noodles are Japanese noodles made from the root of the konjac plant. Just a warning, not all brands are the same. The consistency of the noodles varies by brand and some have a particular smell. Rinsing removes this, but it’s pretty strong. I’ll link to my favorite brand here. This brand has no smell and has the best consistency I’ve found.
I tried shirataki noodles a couple of times and didn’t like them. Then I found a great method for preparing them and now they are one of my favorite foods. First, rinse the noodles under hot water for a couple of minutes in a strainer. Then use a towel or paper towel to dry them as much as possible. I then cut my noodles so each piece is 2-3 inches long. Last, dry saute the noodles over medium heat, stirring occasionally, for 8-10 minutes. Once you’ve sauteed them, they’re ready! These noodles have little to no taste, so they take on the taste of the sauce you use with them. Some people love them and others…not so much! If you try them, I’d love to hear what you think!

Keto Chicken Bacon Stroganoff

Ingredients
- 8 ounces bacon
- ¼ cup diced onion
- 2 cloves garlic, minced
- 14 ounce can chicken broth
- 1 cup sour cream
- ¼ cup chopped parsley
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 4 cups cooked shredded chicken
- ½ teaspoon xanthan gum
Instructions
1. In a large skillet, fry bacon until desired crispness. Remove bacon. Crumble and set aside. Drain all but 1 tablespoon of bacon grease from skillet.
2. Over medium heat, saute onions in skillet with reserved bacon grease until softened, 3-4 minutes. Add garlic during last minute.
3. Add chicken broth, sour cream, parsley, paprika, salt, and pepper to skillet. Whisk until mixture is smooth.
4. Add chicken and crumbled bacon. Increase heat to medium high. Cook until mixture comes to a boil. Decrease heat to medium. Cook, stirring occasionally, until mixture is heated through.
5. Sprinkle xanthan gum over mixture. Stir to combine. Simmer until mixture thickens, 3-4 minutes.
6. Serve immediately. Top with additional parsley, if desired.
