Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- ½ cup diced onion
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 cups heavy whipping cream
- 4 ounces cream cheese, softened and cubed
- 2 cups cooked and chopped chicken
- 2 cups cooked and chopped ham
- ¼ cup fresh chopped parsley
- 1 tablespoon Dijon mustard
- 1 teaspoon xanthan gum
- 2 cups shredded Swiss cheese
- Optional: top with additional chopped parsley
Instructions
1. In a large stockpot, over medium heat, add butter and olive oil. Once pan is hot, add onions. Saute until onions start to soften, about 5 minutes. Add garlic during last minute.
2. Add chicken broth, heavy whipping cream, cream cheese, chicken, ham, parsley, and mustard. Stirs to combine.
3. Increase heat to medium high for 5 minutes, or until cream cheese is melted. Decrease heat to medium and simmer for 15-20 minutes.
4. Sprinkle xanthan gum over soup. Whisk it into soup. Simmer for 2-3 minutes or until soup starts to thicken.
5. Add Swiss cheese. Stir and simmer until cheese is melted, 2-3 minutes.
6. Top with additional chopped parsley if desired.
