You can use any color or color combination of bell peppers for your slaw. I used a yellow onion, but a red onion would be a great substitution. For my chicken, I used chicken breast meat. You can use either white or dark meat chicken, or a combination of light and dark for your coleslaw. An awesome quick and easy option is to use rotisserie chicken! I chopped my chicken but if you’d prefer, you could shred yours.

It’s a mild mixture so our dressing is nice and mild as well! The creamy base for our dressing combines keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayonnaise. When buying mayo, you’ll want to check the nutritional labels to make sure there isn’t added sugar or other ingredients you don’t want. I added a couple of tablespoons of fresh lime juice to give our dressing just a touch of tangy flavor. If you’d rather, you can substitute with bottled lime juice for your dressing.

Ingredients
- 14 ounces green cabbage, thinly sliced
- 2 ounces red cabbage, thinly sliced
- ¼ cup diced green peppers
- ¼ cup diced red peppers
- 2 tablespoons diced onion
- 2 cups cooked and chopped chicken
- ½ cup keto mayonnaise
- ½ cup sour cream
- 2 tablespoons fresh lime juice
- 1 tablespoon keto fajita seasoning
Instructions
1. In a large mixing bowl, add green and red cabbage, diced peppers and onion. Stir to combine.
2. Add chicken and toss to combine. Set aside.
3. In a small mixing bowl add remaining ingredients. Stir to combine.
4. Pour dressing over cabbage mixture. Stir to combine.
5. Serve immediately, or refrigerate until ready to serve.
