How do I make these keto chicken Parmesan bites?
These bites are really easy to make, but there are a few things you can do to ensure yours come out perfectly. For the best results, I recommend brining your chicken for at least 2 hours. Then, to make the bites, you’ll want to set up your breading station. This consists of using two shallow bowls, one for an egg wash, and one for a coating mixture. You’ll want to dip each piece of chicken in the egg wash, then dip it in the coating mixture to completely coat. You’ll continue with the chicken pieces. I ended up with about 60 chicken bites; but this will vary depending on the size of your chicken pieces. Once dipped in the egg wash and coated in the breading, you’ll want to bake your chicken bites for about 20 minutes, flipping at the halfway point, or until they reach 165 degrees.

These bites can be served just as they are or with a side of keto marinara for a dipping sauce. I like to serve these with hearts of palm noodles and topped with marinara sauce and fresh chopped parsley. You can also serve these bites with shirataki pasta or with your favorite spiralized noodles. When making hearts of palm noodles, you’ll simply rinse them, then boil until they reach your desired consistency. You can use keto marinara or spaghetti sauce. When buying, you’ll just want to make sure there is no added sugar or ingredients you don’t want. You can also use homemade sauce if you’d like. Another delicious option is to top this dish with some fresh shaved Parmesan cheese.

Ingredients
For the brine:
- 2 cups water
- 1½ tablespoon granulated sugar substitute (Swerve)
- 1½ tablespoons salt
- 1½ pounds chicken breast, cut into cubes
For the chicken Parmesan bites:
- 2 eggs, lightly beaten
- 2 tablespoons heavy whipping cream
- 1½ cups almond flour
- ½ cup fresh grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon onion powder
- ½ teaspoon parsley
- ½ teaspoon salt
- ½ teaspoon pepper
- Optional: serve with hearts of palm noodles and marinara sauce
Instructions
For the brine:
1. Add water, sugar, and salt to a bowl or dish. Stir until sugar and salt are most dissolved. Add cubed chicken. Refrigerate 2-4 hours or overnight.
For the chicken Parmesan bites
1. When ready to make chicken bites, pre-heat oven to 425 degrees. Line a large baking sheet with parchment paper. Set aside.
2. Drain and discard brining liquid from chicken. Pat chicken dry with paper towels. Set aside.
3. In a shallow bowl add eggs and heavy whipping cream. Stir to combine.
4. In another shallow bowl, add almond flour, Parmesan cheese, garlic powder, Italian seasoning, onion powder, parsley, salt, and pepper. Stir to combine.
5. Coat a piece of chicken with egg mixture, then roll in almond flour mixture to coat all sides. Place chicken onto prepared baking sheet. Repeat with remaining pieces of chicken.
6. Bake for 10 minutes. Flip nuggets and bake for an additional 10 minutes, or until chicken reaches 165 degrees.
7. Serve with a side of hearts of palm noodles and marinara if desired.
