When you want an amazing comfort food dish, this keto chicken Parmesan casserole is a perfect choice. This casserole comes together quickly and is absolutely delicious. This is a family friendly dish that will always satisfy! Enjoy!
Let’s talk about our chicken!
You have some great options for the kind of chicken you use to make this casserole. Traditional chicken Parmesan, also known as chicken parmigiana, is made with breaded chicken topped with a tomato based sauce and mozzarella and Parmesan cheese. The most popular choice for the chicken used to make this dish is boneless and skinless chicken breasts. That’s what I used to make this casserole. Alternately, you can use dark meat or a combination of light and dark meat. I often buy a whole chicken and boil it until it’s cooked to at least 165 degrees. Then I use the meat to make casseroles, soups, and chicken salad. This would work for this casserole as would using rotisserie chicken. I used chopped chicken for my casserole, but you could use shredded chicken if you’d like. To season our chicken, we toss it with Italian seasoning, garlic powder, and onion powder.
What other ingredients go into this keto chicken Parmesan casserole?
To make this casserole, in addition to our seasoned chicken, we simply add sauce and cheese! We’re topping our chicken with red pasta sauce. You can use marinara or spaghetti sauce. When buying your sauce, you’ll want to read the nutritional labels to make sure there is no added sugar or other ingredients you don’t want in your sauce. You can also make homemade spaghetti sauce for this casserole if you’d like. For our cheese, we’re using a combination of shredded mozzarella and grated Parmesan. For the best results, I highly recommend buying a block of mozzarella cheese and shredding it yourself, and buying a wedge of Parmesan and grating it yourself. They melt the best and provide the best flavor. I sprinkle my casserole with some dried basil and it makes for a very pretty presentation, but this is optional.
What can I serve with this keto chicken Parmesan casserole?
You have some awesome low carb options for serving this casserole. I love starting meals with a green salad. We especially love Caesar salads and wedge salads. I’ll often set out a large bowl of chopped iceberg or romaine lettuce, then serve it with our favorite salad toppings. These include bacon, diced tomatoes, hard boiled eggs, and shredded cheese. A Caprese salad would also pair nicely with this casserole. You can serve this casserole with a side of keto biscuits, chaffles, cornbread, or English muffins. If you’d like a low carb pasta alternative to serve with your casserole, you can use shirataki noodles or hearts of palm pasta. You can also serve this casserole with cauliflower rice. Another great option is to serve this dish with a side of low carb vegetables. Some good choices include asparagus, broccoli, Brussels sprouts, cabbage dishes, cauliflower, and green beans.
