This keto chicken salad with bacon is amazingly creamy and flavorful! It will be a huge hit every time you serve it!
My family loves chicken salad, and this keto chicken salad with bacon is one of our favorites! The addition of bacon takes this salad over the top in flavor and texture. Then we add an awesome dressing using both keto mayonnaise and keto Greek yogurt. This is a great salad that makes any meal extra special and is also perfect to serve for barbecues, picnics, and all kinds of get togethers.
Let’s talk about the meats that go into this salad!
I love making homemade chicken salad because my family loves it. You have some great options for the chicken you use to make chicken salad. I usually boil a whole chicken and use ½ white meat and ½ dark meat to make my chicken salad. This combination makes for an amazingly delicious salad. Alternately, you can use all white meat or all dark meat to make your chicken salad. Using a rotisserie chicken is a quick, easy, and delicious option. I used thick sliced bacon for my salad, but regular bacon works perfectly too. You can either cook your bacon on the stovetop or in the oven and then crumble it, or you can dice raw bacon and saute it in a skillet until it reaches your desired crispness level.
What other ingredients go into this keto chicken salad with bacon?
Although the chicken and bacon are key ingredients in this salad, they do need a little help to make the perfect chicken salad! I added diced celery, diced red onion, and fresh chopped parsley to my chicken salad. If you’d rather, you can use a yellow or white onion in place of the red onion. You can also add more celery and onion if you’d like. I love using fresh parsley , but in a pinch, you can use dried parsley for your salad. You’ll want to use about 4 teaspoons of dried parsley in place of the ¼ cup of fresh parsley. One of the wonderful things about making homemade dishes is you can customize them to your taste preferences. Some change ups you can make to this salad include adding diced bell peppers, adding fresh or dried chives, or adding sliced almonds, pumpkin seeds, or sunflower seeds!
How do I make the dressing for this keto chicken salad with bacon?
I love making homemade chicken salad because I know it’s something my family will always enjoy! I usually combine keto mayonnaise with sour cream to make the dressing for my chicken salad. But for this salad I used a combination of keto mayonnaise and keto Greek yogurt. Greek yogurt contains less fat than sour cream and has a different consistency, but it combines with the mayonnaise to make an incredibly delicious base for our dressing. To this we add a secret ingredient, keto brown sugar! It rounds out all our other flavors and adds just the right amount of subtle sweetness! We then add mustard and paprika. I used yellow mustard for this dressing, but Dijon mustard is a great choice too. To make this dressing, we simply combine all our dressing ingredients in a small bowl and stir until the ingredients are combined and the dressing is smooth.
