A rotisserie chicken would be a good quick option as well. You can either chop or shred your chicken. For the spinach, I used fresh spinach. You can chop or tear your spinach into bite size pieces. I used a jar of quartered artichokes, packed in water, for my casserole. You’ll want to drain and chop your artichokes before adding to the casserole.

We use cream cheese, keto mayonnaise, and sour cream to help create the most awesome creamy mixture for this casserole. Next, I recommend you chop your chicken, spinach, and artichokes into similar sized pieces. You’ll want to make sure your cream cheese is softened before mixing with your other ingredients. Last, you can bake this immediately after making it. You can also make your casserole a day or two ahead of time and store it, covered, in the refrigerator until you’re ready to bake it. Since it has been refrigerated, just know it will need to bake longer to get it heated through.

Ingredients
- Avocado oil spray
- 8 ounces cream cheese, softened
- ½ cup keto mayonnaise
- ½ cup sour cream
- 12 ounce jar quartered artichoke hearts, drained and chopped
- 10 ounces fresh spinach, chopped
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon smoked paprika
- ¼ teaspoon pepper
- 4 cups cooked and chopped chicken
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated parmesan cheese
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 13x9 inch baking dish by spraying with avocado oil spray. Set aside.
2. In a large mixing bowl, add cream cheese, mayonnaise, and sour cream. Beat until combined and smooth.
3. Add artichoke hearts, spinach, garlic powder, onion powder, salt, smoked paprika, and pepper. Stir to combine ingredients.
