I have fond memories of growing up on a dairy farm in Wisconsin, where my mom had a huge garden and always grew lots of cucumbers! We usually ate them plain sometimes sprinkled with salt or added to all kinds of salads. Cucumbers are a wonderful keto food option. They’re low in both calories and in carbs. I used regular cucumbers to make this salad. Alternately you can use English cucumbers to make this dish. English cucumbers are longer, have thinner skin, and have less seeds than regular cucumbers. You’ll find English cucumbers wrapped in plastic which protects their skin and helps to keep them fresher longer. Whichever kind of cucumber you choose, you don’t have to peel them. For a special presentation, I like to partially peel my cucumbers which gives them a pretty striped appearance.

To our cucumbers, we add red onions and fresh chopped cilantro. I diced my red onion, but if you’d prefer you could thinly slice your onions or could even cut them into rings. You can also substitute with white or yellow onions if you’d like. Another fun option is to use diced green onions in place of the red onions. I love fresh cilantro and add it to everything from salsa and guacamole to dressings, sauces, salads, and main dishes. If you don’t like cilantro, you can substitute with fresh chopped parsley. You could also add some basil or dill if you’d like. Another fun option for this salad is to add some chopped or sliced avocado. You could even add some thinly sliced radishes. This dish is mild, but if you’d like to add some heat, you could add some diced jalapenos.

The dressing for this salad comes together quickly with just a few simple ingredients, but it helps to create an amazingly delicious salad. Our vinaigrette combines olive oil, lime juice, chili powder, keto granulated sugar, salt, and pepper. For the lime juice, I like to use fresh whenever possible, but you can always use bottled lime juice if you’d prefer. You’ll notice we add quite a bit of chili powder to this dish, and it gives it amazing flavor and color! For sugar, I used the Swerve brand. It contains zero calories and zero carbs, and is quite similar in its sweetness level to regular sugar. Swerve also make a delicious brown sugar and powdered sugar. If you’d like to add some heat to your vinaigrette, you can add some cayenne pepper or some red pepper flakes.

Ingredients
- 2 large cucumbers, sliced
- ¼ medium red onion, diced
- ¼ cup fresh chopped cilantro
- 2 tablespoons olive oil
- Juice of 1 lime
- 2 teaspoons chili powder
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon salt
- ¼ teaspoon pepper
Instructions
1. To a large mixing bowl, add cucumbers, onions, and cilantro. Set aside
