If you like a little heat, I think you’re going to love this keto chipotle lime chicken salad! You can also adjust the ingredients to decrease or increase the heat level in this salad. And coming in at just 1 net gram of carbs per serving, you can enjoy this delicious salad as often as you’d like! Enjoy!
Let’s talk about the ingredients in this chicken salad!
For my chicken, I boiled a whole chicken and used a combination of white and dark meat for this salad. You can use chicken breasts if you’d like all white meat. A quick and easy option that works great is to use a rotisserie chicken. We then add some diced celery, red pepper, and onion to our salad. You don’t have to add a lot to get great color, flavor, and taste. And by not adding too much, we keep the carb count down in this dish.
What goes into the dressing for this keto chipotle lime chicken salad?
I love the combination of flavors in this dressing! We combine keto mayonnaise with sour cream to give our dressing awesome creaminess and flavor. A little fresh lime juice adds a fun splash of flavor to this dressing. For a warm and delicious heat addition, we add 2 chipotle peppers in sauce. I started with one, then tasted and had to add another! You can do the same and can even add more if you want more heat. I added Dijon mustard to my dressing, but you can use yellow or even spicy brown mustard if you’d prefer. Fresh cilantro gives this salad amazing flavor and color! To balance everything out, a little keto brown sugar does the trick. Then there’s good old salt and pepper. You can taste your salad and add more salt if you’d like.
How can I serve this keto chipotle lime chicken salad?
