What is the difference between custard and pudding?
There are a number of similarities between custard and pudding. Both are thick, creamy, and sweet desserts. Custards are usually thicker than puddings. The key difference is determined by how each dessert is thickened. Pudding is primarily thickened by adding a starch, either cornstarch or flour. Pudding may or may not contain eggs. Custard, on the other hand, is thickened mainly by eggs and usually just contain egg yolks. Custard doesn’t use cornstarch or flour as a thickener.
What are the best chocolate chips to use in this keto chocolate custard?
There are a few different options available for the chocolate in this recipe. You can use Lily’s chocolate chips, either the milk chocolate or dark chocolate, depending upon your preference. A very dark low carb chocolate bar could be chopped up and used here as well. You may have to adjust the carb count if you go this option. I chose to use the semi-sweet chocolate chips from Bake Believe. They also have available dark chocolate and white chocolate chips! You may just want to try all three!
Helpful Hints:
*Make sure you temper your eggs. This simply means you add a little of the hot chocolate mixture from the saucepan into the egg mixture and stir to combine. Then add the egg mixture into the chocolate mixture in the saucepan. If you skip this step, you might just end up with some scrambled eggs!😊
*When you cover your custard with plastic wrap, lightly press the plastic wrap onto the surface of the custard. This helps to prevent a film, sometimes called a skin, from forming on the top surface of the custard.
