These keto chorizo green chile squares will be a huge hit every time you serve them! These squares can be served as an appetizer or as a main dish.
Ingredients
- Avocado oil spray
- 9 ounces Mexican pork chorizo
- 3 (7 ounce) cans whole green chiles, drained
- 2 cups shredded colby jack cheese
- 6 eggs
- ½ cup heavy whipping cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Notes
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray.
2. In a medium skillet, over medium high heat, saute chorizo until browned and cooked through.
3. Cut chiles so you can lay them flat evenly onto bottom of baking dish. Remove seeds if desired.
4. Top chiles evenly with cooked chorizo. Then top evenly with shredded cheese. Set aside.
5. In a medium bowl, add remaining ingredients. Whisk to combine. Pour over cheese.
6. Bake for 30-35 minutes, or until knife inserted comes out clean. Let set for 5 minutes before cutting and serving.
