How did you make your hard-boiled eggs for this keto classic egg salad?
When I make a large batch of hard-boiled eggs, as I did with this recipe, I boil my eggs on the stovetop. I live in Colorado at an elevation of about 7350 feet which makes some of my cooking and baking different. My go-to recipe for hard-boiled eggs is easy though. First, I bring my water to a boil and then add my eggs. After the water comes back to a boil, I cook for 16 minutes. Your eggs may take less cooking time if you aren’t at altitude.😉
I love having a few hard-boiled eggs available, so when I just want to make a few I use my Dash egg cooker. I love this appliance! You can make soft, medium, or hard-boiled eggs with the Dash egg cooker. As a bonus, the egg cooker is absolutely adorable and comes in a variety of colors! Whatever method you choose to make your hard-boiled eggs, just make sure, after cooking your eggs, that you immediately place them into an ice bath to stop them from cooking.
Are eggs keto?
Absolutely! Eggs are an awesome keto food choice. In fact, they’re just an awesome food! One medium egg contains approximately 70 calories, less than a gram of carbs, 6 grams of protein, and five grams of fat. Aren’t those beautiful numbers! Eggs also contain some great nutrients including choline, folate, phosphorus, selenium, and zinc. They also provide you with vitamins A, B6, B12, D, E, and K. Another great thing about eggs is there are so many ways you can prepare them and so many recipes you make using them!

The sauce for this salad contains only 6 ingredients; but they are 6 carefully chosen ingredients that come together to create a fabulously delicious egg salad! For my mayo, I used the Chosen Foods avocado oil mayonnaise. You can use any keto mayonnaise you’d like. Just make sure you read the nutrition label so you know exactly what ingredients you’re getting. The dill pickle juice gives this sauce an awesome zing of briny flavor. The yellow mustard gives the sauce both flavor and color. Paprika, salt, and pepper round out the sauce perfectly. I recommend you taste your egg salad and feel free to add additional salt and pepper if you’d like!
What are some ways I can serve this egg salad?
You have numerous keto options for serving this salad! It tastes great all on its own, eaten out of a big bowl! You can also serve it atop lettuce or spinach for a tasty option. It works great in a lettuce wrap or even as a dip for your favorite keto vegetables, crackers, or cheese whisps. You can also serve it as a sandwich using your favorite keto bread or as I like to do using my 90 second keto English muffins!

Keto Classic Egg Salad
This keto classic egg salad recipe is one of my go-to recipes! It is a quick, easy, creamy, and delicious salad that is also low carb!
Ingredients
- 16 hard boiled eggs
- 1 cup keto mayonnaise
- 1 tablespoon dill pickle juice
- 2 teaspoons yellow mustard
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Peel and chop eggs. Place in a large mixing bowl. Set aside.
2. In a small mixing bowl, add remaining ingredients. Stir to combine.
3. Pour mayonnaise mixture over chopped eggs. Stir until combined and eggs are completely coated with dressing mixture.
4. Serve immediately or refrigerate, in a covered container, until ready to serve.
