This keto cranberry butter is perfectly sweet with just a hint of tartness! Fresh cranberries never tasted so good!
I made this keto cranberry butter because I had some extra fresh cranberries. But it’s so creamy and delicious, it’s worth buying cranberries just to make this butter. This butter is quick and easy to make, yet it’s amazingly flavorful and so pretty to serve. It’s perfect for the holidays and anytime you’d like a special treat.
Let’s talk about cranberries!
I love it when Autumn comes and when I start to see fresh cranberries in the stores! Although most fruits are too high in carbs to be included in a keto plan, most berries, including cranberries, are a great keto food choice. Cranberries are low in calories and relatively low in carbs. One cup of fresh cranberries contains approximately 8 net grams of carbs. Cranberries also provide us with a source of nutrients and vitamins. This year I made two new keto cranberry recipes, run vanilla cranberry sauce and spiced cranberry ketchup. I had some extra cranberries, and this cranberry butter seemed an awesome way to use up my extra cranberries. For this butter, we’re chopping our cranberries. I have a mini food chopper and used this to chop my cranberries. Alternately, you can use a food processor, or you can chop your cranberries by hand if you’d like.
What other ingredients go into this keto cranberry butter?
In addition to fresh cranberries, we combine just a few simple yet incredibly delicious ingredients to make this cranberry butter. You can use salted or unsalted butter to make this compound butter. I used salted butter to make mine and I think it enhances the flavors in this cranberry butter. For the keto powdered sugar, I used the Swerve brand. It’s my go-to keto sugar as it contains zero calories and zero net carbs. It’s also amazingly similar in its sweetness level to regular sugar. You can use your favorite keto sugar but may have to adjust the amount based upon the sweetness level it contains. The last ingredient we add to make this cranberry butter is ground cinnamon. I added ⅛ teaspoon of cinnamon to my cranberry butter. You can add ¼ teaspoon if you’d like a stronger cinnamon flavor.
How do I make this Keto Cranberry Butter?
This butter is incredibly easy to make, but I do have some tips for making it. First, you’ll want to make sure you start with softened butter. Next, when chopping the cranberries, you have a variety of options for doing this. I used a mini food chopper, which is one of my favorite go-to appliances. Alternately, you can use a food processor, or you can chop your cranberries by hand using a good kitchen knife. You’ll want to stir your ingredients together so the cranberries get evenly distributed in the butter. At this point, you can simply refrigerate your butter in a covered container in the refrigerator until you’re ready to serve it. I like to place my mixture onto plastic wrap, shape it into a log, and wrap it tightly in the plastic wrap. This way, you can refrigerate, then slice your butter into pretty rounds to serve.
