The awesome news is that most berries, including cranberries, are a wonderful option when eaten in moderation. One cup of cranberries contains only about 8 net grams of carbs. I love fall when you can almost always find fresh cranberries and am always looking for new and delicious keto dishes to make using them! A favorite family tradition of ours is making homemade cranberry sauce for Thanksgiving. We’re entertained, every year, watching and hearing the fresh cranberries pop as they cook. I usually cook my cranberries, but there are times when cranberries are great raw. This year I made a creamy keto cranberry salad with spiced pecans and it was a huge hit. I like to let my cream cheese soften and I like to cube it before adding it to the blender. When buying your almond milk, you’ll want to make sure you’re using unsweetened to keep the carb count low. For sugar, I used the Swerve brand. It contains zero calories and zero net carbs and is impressively similar in its sweetness level to regular sugar. The addition of cinnamon combines so well with the cranberries, and the vanilla and salt round out our flavors and enhance all the other flavors in this smoothie. If you’d like you can also top your smoothie with homemade whipped cream.

If you’ve never made homemade whipped cream, you’re in for a real treat. Homemade is superior in both taste and texture to anything else. Plus, when you make your own, you can be assured of exactly what goes into it and can adjust it for your desired sweetness preference. I recommend chilling your mixing bowl and beaters in the freezer for 15-20 minutes before using. Then, to your chilled bowl, you’ll add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. You’ll then use an electric mixer and beat your mixture until heavy peaks form. Heavy peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can give your whipped cream a taste and add even more keto powdered sugar if you’d like a sweeter whipped cream.

- 8 ounces cream cheese, softened and cubed
- 2 cups fresh cranberries
- 2 cups unsweetened almond milk
- 1 cup heavy whipping cream
- ½ cup granulated sugar substitute (Swerve)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pinch of salt
- Optional: top with keto whipped cream
