The dressing for this shrimp salad comes together quickly and is amazingly delicious! For the creamy base to our dressing, we combine keto mayonnaise and heavy whipping cream. When buying mayonnaise, you’ll just want to make sure there is no added sugar or oils you don’t want. We then add some lemon juice and olive oil. I used fresh lemon juice but bottled can also be used. We also add fresh parsley, chopped celery, diced red onion, and fresh chopped dill to our dressing. These add incredible flavor and wonderful texture to our salad. If you’d like to substitute with dried herbs, the basic rule is to use about one third the amount of dried in place of the fresh. For seasoning, we add some smoked paprika, garlic powder, salt, and pepper. You can give your salad a taste and add more salt and pepper if you’d like.

Keto Creamy Dill Shrimp Salad
This keto creamy dill shrimp salad is an awesomely fresh and flavorful salad! It makes for a great main or side salad!
Ingredients
- 1 pound shrimp
- ⅓ cup keto mayonnaise
- 2 tablespoons heavy whipping cream
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- ½ cup chopped fresh parsley
- 1 stalk celery, chopped
- 2 tablespoons diced red onion
- 2 tablespoons chopped fresh dill
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
1. Bring a pan of water to a boil. Add shrimp and cook 2-3 minutes, or until cooked through.
2. Immediately place shrimp in a colander and rinse with cold water to stop cooking process. Alternately, place shrimp in a bowl filled with cold water. Once cooled, remove tails. Peel and devein if necessary.
3. In a medium mixing bowl, add remaining ingredients. Stir to combine.
4. Add shrimp and stir to completely coat shrimp in dressing.
5. Chill, covered, in refrigerator until ready to serve.
