If you have leftover cooked broccoli and cauliflower, you could also use this. I had cooked a ham and had some leftovers, so this is what I used in my casserole. Whatever ham you use, check your nutrition labels as the amounts of fat, protein, and carbs vary according to brand.

I used white onions in my casserole, but you could use red or yellow onions if you’d like. Next, I love the color created when combining green and red peppers so that’s what I chose for this dish. You can use any color or color combination of bell peppers in this recipe. I thought swiss cheese would be the perfect choice for this casserole! You can use any cheese that melts well. Colby, gouda, Monterey jack, mozzarella, or even pepper jack cheese would be some fun alternatives. I chose to top my casserole with some shredded cheddar cheese because it creates a beautiful casserole. Again, you can substitute any good melting cheese to top your casserole!

Next, I recommend using xanthan gum to help thicken this casserole. You can omit this ingredient; but your casserole might not come out as thick. Last, you can prepare this casserole a couple of days ahead. Just cover the casserole and place in the refrigerator. Then when you’re ready to bake it, take it out of the refrigerator for a half hour or so before baking!

Keto Creamy Ham and Vegetable Casserole

Ingredients
- Avocado oil spray
- 12 ounces broccoli, chopped
- 12 ounces cauliflower, chopped
- 2 cups ham, cooked and diced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 tablespoons diced onion
- 2 tablespoons diced green pepper
- 2 tablespoons diced red pepper
- 2 garlic cloves, minced
- 1¼ cup heavy whipping cream
- ⅓ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon xanthan gum
- 2 cups shredded swiss cheese
- 1 cup shredded cheddar cheese
Instructions
1. Pre-heat oven to 350 degrees.
2. Spray a 13x9 inch baking dish with avocado oil. Set aside.
3. Cook or steam broccoli and cauliflower until fork tender. Place in prepared pan. Top with diced ham. Set aside.
4. In a large skillet, over medium heat, add butter and olive oil.
5. Once butter is melted, add onion and peppers. Saute for 5 minutes or until vegetables start to soften. Add garlic during last minute.
6. Add heavy cream, smoked paprika, salt, and pepper. Stir to combine.
7. Sprinkle xanthan gum over mixture. Stir to combine. Simmer 2-3 minutes or until mixture starts to thicken.
8. Add shredded swiss cheese. Stir to combine and simmer until cheese is melted.
9. Pour sauce over ham and vegetables. Stir to coat vegetables and ham with sauce.
10. Sprinkle with shredded cheddar cheese.
11. Bake, uncovered, for 25-30 minutes, or until heated through.
