Let’s talk about our homemade keto sweetened condensed milk!
It’s so easy to make your own keto sweetened condensed milk. You can then use it for any recipe calling for sweetened condensed milk, but yours will be low carb! We’re using heavy whipping cream in place of milk to help keep our carb count low. This also results in a wonderfully rich and creamy sweetened condensed milk. For sugar, I used the Swerve brand granulated sugar. It contains zero calories and zero net carbs and is similar in its sweetness level to regular sugar. After allowing the heavy whipping cream and sugar to simmer for 30-35 minutes, you’ll notice it takes on a nice light golden color. You’ll then remove it from the heat and stir in the butter and vanilla. The sweetened condensed milk will further thicken as it cools. If not using right away, you’ll want to store your sweetened condensed milk covered in the refrigerator.
What other ingredients go into this keto creamy lemonade?
The keto sweetened condensed milk is the special ingredient which makes our lemonade creamy, so we simply need to combine fresh lemon juice and water to make the base for our drink. I highly recommend using fresh lemons to make the freshest and most refreshingly delicious lemonade. I usually just use a hand held juicer to juice my lemons. If you’d like, you can roll your lemons on the countertop a few times or can microwave them for about 15 seconds to get the most juice out of them. Depending on the size of your lemons, you’ll need about 6-9 medium sized lemons to get 1½ cups of juice. I like to take the extra step and strain my juice through a fine mesh sieve, but this isn’t absolutely necessary. To our lemon juice, we simply add water since our sweetened condensed milk will add the sweetness.
Do you have any tips for making this keto creamy lemonade?
This is a fun and easy drink to make, but I do have a few tips so yours will come out perfectly! First, you can make your keto sweetened condensed milk ahead of time and refrigerate it until you’re ready to make your lemonade. Next, everyone has their preference for the perfectly sweet and perfectly tart lemonade, and you can easily achieve this for your lemonade.😊As written, I consider this creamy lemonade to be mildly sweet and a bit on the tart side. If you’d like a sweeter lemonade, you can add more sugar to your lemonade until it reaches your perfect sweetness level! If you’d like a less tart lemonade, you can use 1-1¼ cups of fresh lemon juice instead of using 1½ cups. You also make the recipe as written, then add an extra ½ cup water to make your lemonade less tart.
