Ingredients
- 1 tablespoon butter
- 1 tablespoon oil from sun-dried tomatoes
- 8 bone-in, skin-on chicken thighs
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons finely diced onion
- 4 garlic cloves, minced
- 1½ cups heavy whipping cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- ½ cup chopped basil
- ½ cup chopped sun-dried tomatoes
- ½ cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon xanthan gum
Instructions
1. Pre-heat oven to 375 degrees.
2. In a large ovenproof skillet, over medium high heat, add butter and oil.
3. Season chicken on both sides evenly with salt and pepper. Saute chicken, searing both sides, approximately 5 minutes per side. Remove chicken from pan.
4. Decrease heat to medium. Saute onion for 2-3 minutes, or until softened. Add garlic during last minute.
5. Add heavy cream, chicken broth, mustard, basil, sun-dried tomatoes, parmesan cheese, and Italian seasoning.
6. Increase heat to medium high. Simmer sauce, stirring occasionally, for 5 minutes, or until sauce is slightly thickened, 4-5 minutes.
7. Sprinkle xanthan gum over mixture. Stir into sauce. Simmer 2-3 more minutes.
8. Add chicken, skin side up, back into pan with sauce. Spoon sauce over chicken.
9. Bake for 35-45 minutes, or until chicken reaches 165 degrees. Spoon sauce over chicken once or twice while baking.
10. Top with additional chopped basil and freshly grated parmesan cheese, if desired.
