My family absolutely loves this keto crockpot Mexican pulled pork and I’m so excited to share this delicious recipe with you. We combine an awesomely delicous homemade spice mixture which includes keto brown sugar to make this pulled pork. This dish will fill your house with the most amazing aroma while it cooks. It’s full of amazing flavors and will be a huge hit every time you serve it!
Let’s talk about our pork roast!
To make my pulled pork, I used a bone-in pork shoulder roast. I think this makes the most flavorful and juicy pulled pork. For these reasons, this is my go-to for making pulled pork. If you’d like, you could use a boneless pork shoulder roast to make this dish. You could also use a pork butt roast to make this pulled pork. Once you remove the roast from its packaging and discard the liquids, you don’t need to rinse the roast. Another great thing about this dish is that you don’t have to saute or sear your pork roast. You can simply rub it with the dry rub and place it into your crockpot. I leave all the fat on my roast and place it fat side up in the crockpot. Then, after it cooks, you can remove as much of the fat as you’d like before shredding it.
What other ingredients go into this keto crockpot Mexican pulled pork?
We start with a homemade dry rub to make this pulled pork. The rub is amazingly easy to make and also results in an amazingly delicous pulled pork! We combine chili powder, keto brown sugar, cumin, dried oregano, garlic and onion powder, salt, pepper, and smoked paprika to make our homemade rub mixture. I used regular chili powder, but if you want to add some heat, you can use hot chili powder or chipotle chili powder. You could also increase the heat level by adding some cayenne powder to your spice mix. For my brown sugar, I used the Swerve brand. It contains zero calories and zero net carbs. It’s also delicious and amazingly similar in its sweetness level to regular brown sugar. After rubbing this mixture evenly into the pork roast, I place my roast fat side up in the crockpot and pour the tomato sauce around the roast.
What are some ways I can serve this keto crockpot Mexican pulled pork?
You have some awesome keto options for serving your pulled pork. First, you can choose how much fat you’d like to remove from your pork before shredding the meat. Also, after shredding your pork, you can add some of the cooking liquid, either straining off the fat with a fat separator, or adding it as is. I love this pulled pork as is, but you can drizzle some keto barbecue sauce over yours if you’d like. This pulled pork can be served as a sandwich using chaffles, keto English muffins, or your favorite keto bread. You can also use it as a filling for lettuce wraps. You can make a delicious green salad and use this pulled pork as the main ingredient and then top with all your favorite salad toppers. Another great option is to serve this pulled pork with a side salad or with coleslaw.

Ingredients
- 6-9 pound bone-in pork shoulder roast
- 2 tablespoons chili powder
- 1 tablespoon brown sugar substitute (Swerve)
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon smoked paprika
- 1 (8 ounce) can tomato sauce
Instructions
1. Remove pork roast from packaging and set aside.
2. In a small bowl, add chili powder, brown sugar, cumin, dried oregano, garlic powder, onion powder, salt, pepper, and smoked paprika. Stir to combine.
3. Rub seasoning mix evenly into pork roast.
4. Place roast, fat side up, into crockpot. Pour tomato sauce around roast.
5. Cook on low for 8-10 hours.
6. Remove roast from crockpot. Discard bone and as much fat as desired. Use 2 forks to shred roast.
7. Add as much of the roast drippings to pulled pork as desired.
