This keto crustless ham and spinach quiche is a quick, easy, and delicious dish! It’s perfect for breakfast, brunch, lunch, or dinner!
Ingredients
- Avocado oil spray
- 1 tablespoon butter
- 3 tablespoons diced onion
- 3 tablespoons diced red pepper
- 2 cups diced ham
- 1½ cups chopped fresh spinach
- 2 cups shredded colby jack cheese, divided
- 6 eggs
- 1 cup heavy whipping cream
- ½ teaspoon dry mustard
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 9 or 10 inch pie plate by spraying with avocado oil spray. Set aside.
2. In a small skillet, over medium heat, melt butter.
3. Add diced onions and peppers. Saute for 5 minutes, stirring occasionally, until vegetables start to soften. Set aside.
4. Add diced ham and chopped spinach to prepared pie plate. Add onions and peppers. Stir to combine.
5. Add 1½ cups of shredded cheese and stir to combine. Set aside.
6. In a medium mixing bowl, add eggs. Whisk eggs. Add heavy cream, dry mustard, salt, and pepper. Whisk to combine.
7. Slowly pour egg mixture over ham and spinach mixture. Sprinkle remaining ½ cup shredded cheese evenly over quiche.
8. Bake for 40-45 minutes or until knife inserted comes out clean.
9. Allow quiche to set for 5-10 minutes before serving.
Notes
If you're using ham packaged in water, you’ll want your ham as dry
as possible to avoid having a watery quiche. You can use paper towels to press out the extra moisture from the ham.
