This keto curried chicken salad is amazingly flavorful and has the perfect combination of creamy and crunchy elements!
Ok, I’m seriously in love with this keto curried chicken salad! Somewhere through the years, I came to believe I didn’t like curry. Then I made homemade keto curry ketchup and absolutely loved it. So when I made this chicken salad, I had high hopes, but never dreamed I’d love it as much as I do. It’s one of my new favorite dishes and I actually find it a bit intoxicating in its amazing taste and aroma. I hope you’ll love this salad as much as I do. And…consider yourself duly warned that it’s a bit addictive!
Let’s talk about our salad ingredients!
You have some great options for the kind of chicken you use for this chicken salad. I boiled a whole chicken and used equal parts white and dark meat for my chicken salad. Alternately, you can use cooked chicken breasts or chicken thighs or a combination of both for this salad. An awesome and time saving choice is to use a rotisserie chicken to make this salad. You can then decide how much white and dark meat you’d like to use. To our chicken, we add chopped celery and chopped green onions. This gives our salad a wonderful crunchy element and also adds great flavor. If you’d like, you can substitute chopped red or yellow onions for the green onions.
How do I make the dressing for this keto curried chicken salad?
The dressing for this chicken salad is amazingly creamy and amazingly flavorful. We start with combining keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayonnaise for my salad. When buying mayo, you’ll want to check the nutritional labels to make sure there is no added sugar or oils you don’t want. I also recommend using full fat sour cream for this dressing. I love the touch of sweetness that the addition of a little keto brown sugar brings to this dressing. We then add curry powder, lime juice, yellow mustard, salt, and pepper to create an amazingly delicious dressing for our chicken salad. If possible, you’ll want to use fresh lime juice, but you can substitute with bottled lime juice if you’d like. To make this dressing, you’ll simply add all dressing ingredients to a mixing bowl and stir or whisk together to combine.
