I’m not sure how, but for quite some time I thought I didn’t like curry. Then I made keto curry ketchup, and I realized I love curry! It’s such an amazingly delicious spice and now I add it to all kinds of dishes, including this egg salad!

One of my greatest memories is of spending Friday nights with grandma and grandpa, and this went on for years. I’d get up Saturday morning and watch cartoons. It never failed, right in the middle of watching Scooby-Doo, grandma would bring me a plate of bacon and fried eggs. I can still almost taste that amazing breakfast! Eggs are an awesome keto food choice. They’re low in carbs but rich in nutrients. For this dish, of course we’re using hard boiled eggs. If I’m making a small batch, I use my Dash rapid egg cooker. But when making deviled eggs or egg salad, I boil the eggs on the stovetop. For this salad we’re simply adding chopped green onions to our chopped eggs.

The dressing for this salad comes together so quickly, yet it’s creamy and delicious. You’ll spend more time peeling and chopping your eggs than making the dressing. For the creamy base to this dressing, we use keto mayonnaise. I used the Chosen Foods brand avocado oil mayonnaise. When buying mayonnaise, you’ll want to check your nutritional labels to ensure there is no added sugar or oils you don’t want. To our mayo, we add dill pickle juice, yellow mustard, curry powder, salt, and pepper. Curry powder actually contains a variety of spices and ingredients, and these ingredients will vary based on the brand you use. If you’re adventuresome, you can even make your own curry seasoning. To make this dressing, you’ll simply add all the dressing ingredients to a small mixing bowl, then stir or whisk until combined.

Keto Curried Egg Salad
Keto curried egg salad is an amazingly creamy and flavorful salad! It’ll be a big hit every time you serve it!
Ingredients
- 16 hard boiled eggs
- 3 green onions, chopped
- 1 cup keto mayonnaise
- 1 tablespoon dill pickle juice
- 1 tablespoon yellow mustard
- 2 teaspoons curry powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Peel and chop eggs. Place in a large mixing bowl. Add green onions and set aside.
2. In a small mixing bowl, add remaining ingredients. Stir to combine.
3. Pour mayonnaise mixture over eggs and onions. Stir until combined and eggs are completely coated with dressing mixture.
