Take your chicken salad to the next level with this keto deviled chicken salad! It is so delicious it just might turn into your new go-to chicken salad!
I was taking food to a friend and wanted a fun new twist to chicken salad and that’s where this keto deviled chicken salad originated! It was a success with my friend and with my family as well. Combining the classic elements of chicken salad with a delicious creamy dressing, then adding chopped hard-boiled eggs, makes for a winning dish. I hope you enjoy this as much as we do!
Let’s talk about the ingredients that go into this keto deviled chicken salad!
I used a combination of white and dark chicken meat from a whole chicken I had cooked. You can use all white, all dark, or a combination of white and dark meat for your chicken salad. A great and quick option is to use a rotisserie chicken for this dish. I roughly chop my chicken, but you can cube yours or even shred it if that’s your preference. To our chicken, we add diced celery, red pepper, and onion. This gives our chicken salad a nice crunch, and since we’re only adding a small amount of peppers and onions, we keep the carb count down. After adding the dressing, we fold in two chopped hard-boiled eggs. Yum! If you’d like to add more, go for it!😊
How do you make the dressing be creamy, delicious, and keto?
There are a few things we do to keep this dressing low carb and keto while making it incredibly delicious. First, we add keto mayonnaise and sour cream to give our dressing awesome creaminess. The keto brown sugar, lemon juice, and mustard balance out our dressing to give it the perfect combination of flavors. I used the Swerve brand keto brown sugar as it contains zero calories and zero net carbs. It’s also delicious! If possible, I always like to use fresh lemon juice, but bottled works too. A little salt and pepper are all that’s needed to complete our dressing. I recommend you give your chicken salad a taste and add more salt if you’d like.
How can I serve this keto deviled chicken salad?
You have some great keto options for serving this salad. It can be eaten, as is, straight out of a bowl! You can also make a sandwich with it using your favorite keto bread or English muffins. It can also be made into a delicious lettuce wrap! You can serve it as a dip with some keto crackers, cheese whisps, pork rinds, or raw vegetables. Another fun idea is to serve it atop some lettuce or spinach. If you’d like, you can also pair this with a nice keto soup for a delicious soup and salad meal.
