This keto dill pickle coleslaw is a creamy, delightful, and fun salad! This dish will be a crowd pleaser every time you serve it!
I made this keto dill pickle coleslaw for our Super Bowl Sunday dinner and it was a huge success! I made it the day before and let it set in the refrigerator overnight. This allowed time for the flavors to combine and gave the coleslaw the ideal consistency. I hope you enjoy this delicious dish!
Should I make my own coleslaw or buy a coleslaw mix?
That is an awesome question! I love the ease of buying coleslaw mixes. I always check my ingredients to make sure I know there is nothing added to the mix. But it’s also fun to shred and make your own coleslaw mix. Either is fine and both options are low carb and keto. One of the great things about making your own is that you can buy a head of red and green cabbage, use half of each for your coleslaw, then use the other half to make another cabbage dish!😉
What are some of the key ingredients in this keto dill pickle coleslaw?
Chopped dill pickles and some pickle juice add amazing crunch and flavor to this coleslaw. It’s a fun change up to regular coleslaw! I combined keto mayonnaise with some sour cream to create awesome flavor and creaminess. The mustard adds a little tang, and the keto sugar balances the dressing. I love dill so I added some fresh dill to this dish. You can use dried dill, just use 1 teaspoon of dried in place of the tablespoon of fresh dill. Celery seed and garlic powder round out this dish perfectly! I suggest you taste your coleslaw, then add salt and pepper to taste. I added about ¼ teaspoon of each and found this to be the perfect amount.
Do you have any tips for making this keto dill pickle coleslaw?
This is a quick and easy dish to make, but I do have some tips to ensure this coleslaw comes out perfectly for you. First, you’ll want to sort through your coleslaw and cut or tear up any large pieces. You want uniform sized pieces. Next, you can chop your pickles into small or medium sized pieces. I chose to dice mine into small pieces. I love Dijon mustard; but you could use yellow mustard or even spicy brown mustard if you’d prefer. Last, I recommend refrigerating your coleslaw in the refrigerator for 2-4 hours or overnight before serving. This allows the flavors to meld and lets the dressing soften the coleslaw a bit.
