I’m so excited to share this keto French onion soup recipe with you! We combine a variety of onions with an awesomely rich and flavorful broth to create a great soup. Then we top it with keto English muffins and lots of smoked gouda soup to take this soup to the next level. I hope you’ll enjoy this comfort food soup as much as we do!
Let’s talk about our onions!
I used a fun variety of onions for my soup. You can choose any variety you’d like or can even use all yellow onions if you’d prefer. For mine, I used a couple of yellow onions, a couple of white onions, one red onion, and a couple of shallots. Since this combination worked so great, I’ll likely always make this soup with a similar ratio of onions. I especially like the addition of shallots to this soup. They add a mild and somewhat sweet aspect to our dish. I prefer to thinly slice my onions for this soup. An important step for this soup is then to caramelize the onions. To do this, we slowly saute the onions with some butter, olive oil, and keto sugar. Yum!
How do you keep this keto French onion soup low carb?
One cup of onions contains approximately 12 net grams of carbs. Does this mean you have to completely remove them from your food choices? Nope! I limit the amount of onions I add to my foods, but don’t eliminate them entirely. For this soup, we do carefully control how many onions we use; but we make up for it by adding many other incredible and flavorful elements! First, we make an amazingly rich broth which really makes this soup extra special! We then top our soup with keto English muffins. This gives our soup a traditional bread element while adding very few carbs to it. I specifically chose to use smoked gouda for this soup as it adds amazing flavor and complements the other ingredients perfectly.

Our first topping for this soup is keto English muffins. You can use these or substitute with your favorite keto bread if you’d prefer. I used 90 second keto English muffins because they are incredibly quick and easy to make and work perfectly for this soup. I use only egg whites for my muffins, so they don’t have an “eggy” taste.😊One key step for these muffins you won’t want to skip is to cut them in half and toast them until brown. Our second topping is a good amount of shredded smoked gouda cheese. If you’d like, you can substitute any good melting cheese in place of the gouda. I highly recommend buying a block of cheese and grating it since pre-shredded cheeses add ingredients such as cellulose powder and potato starch. Freshly shredded cheese also tastes and melts so much better!

Keto French Onion Soup

Ingredients
- ⅓ cup butter
- 2 tablespoons olive oil
- 2 pounds thinly sliced onions (red, white, and yellow mix)
- 1 tablespoon granulated sugar substitute (Swerve)
- ¼ cup thinly sliced shallots
- 8 cups beef broth
- ¾ cups red wine
- 2 tablespoons tamari
- 1 tablespoon fresh chopped thyme
- 1 tablespoon sherry cooking wine
- 2 bay leaves
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 90 second keto English muffins (5), divided
- 5 cups shredded smoked gouda cheese, divided
Instructions
1. In a large stockpot, melt butter with olive oil over medium heat. Add onions and sugar. Saute for 15 minutes, stirring occasionally.
2. Add shallots. Decrease heat to medium low. Simmer for 1 hour, stirring occasionally.
3. Add beef broth, red wine, tamari, thyme, sherry cooking wine, bay leaves, salt, and pepper. Stir to combine.
4. Simmer for 1 hour. Remove and discard bay leaves.
5. Prepare English muffins and toast them.
6. For each serving, to an oven safe bowl, add French onion soup. Top with 1/2 English muffin. Top with ½ cup shredded gouda cheese.
7. Broil until cheese is melted and golden brown. Serve immediately.
