This keto fresh herb coleslaw is the perfect side for any keto meal. It’s also a great dish to serve at barbecues, picnics, and potlucks. This is a creamy and low carb salad made extra special with the addition of fresh herbs. I hope you’ll enjoy this dish as much as my family does.
Let’s talk about the ingredients in our coleslaw!
I love to make most everything from scratch and will often chop my own green and red cabbage to make coleslaw. But I also love the convenience of pre-made coleslaw mixes and that’s what I used for this salad. And while, because of their carb count, I rarely add carrots to dishes, I make an exception to my rule with coleslaw mixes since they only add a small amount of shredded carrots and the carb count remains low. If you’d like, you can chop some green and red cabbage to make this coleslaw and can decide if you want to add any shredded carrots. For our fresh herbs, I used a combination of chopped cilantro and parsley. If you’d like, you could also add some fresh chopped basil, chives, dill, tarragon, or thyme for your coleslaw. Another option is to add some diced bell peppers and onions if you’d like.
How do I make the dressing for this keto fresh herb coleslaw?
The creamy dressing for this coleslaw is quick and easy to make. It’s also incredibly delicious! The creamy base for our dressing is a combination of keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayonnaise for my dressing. When buying mayo, you’ll want to check your nutrition labels to ensure there is no added sugar or other ingredients you don’t want. To our mayo and sour cream, we add white wine vinegar, Dijon mustard, keto granulated sugar, celery seed, salt, garlic and onion powder, and pepper. If you’d prefer, you can use yellow or even spicy mustard for your coleslaw. You’ll simply add all the dressing ingredients to a small mixing bowl and stir or whisk to combine. I recommend giving your coleslaw a taste and adding more salt and pepper if you’d like.
