You can always have a quick and easy snack when you have some of these keto frozen yogurt covered blueberries on hand! They contain just the right amount of sweet and tart. These little beauties are a fun and easy way to have a special treat any time you’d like!
Can I have blueberries on the keto plan?
Most fruits are high in carbs and don’t fit into a keto plan. Many berries, however, have a much lower carb count and definitely can be incorporated into a low carb and keto plan. One cup of blueberries contains 17-18 net grams of carbs. For this recipe, ¼ cup of blueberries is one serving. So even with the added yogurt, each serving comes in at just 5 net grams of carbs. Blueberries are a low-calorie food but provide some key nutritional benefits. They are a good source of manganese and Vitamins C and K. They also provide us with valuable antioxidants and are a good source of fiber. So, yes, in moderation blueberries are a great keto food option!
What other ingredients are in these keto frozen yogurt covered blueberries?
It’s very important to read your nutrition labels, and this is the case with yogurt as well. Many yogurts are high in sugar and carbs. Many add extra sugar and ingredients you don’t want in your diet. There are a few brands you can choose from that are good choices. The yogurt I used for this recipe is the plain Greek yogurt from the brand Two Good. ¾ cup of this yogurt contains just 3 grams of carbs! Two Good makes flavored yogurt as well that you may want to check out! I added just a little keto powdered sugar and a little vanilla to sweeten these treats. You can add more or less powdered sugar to fit your taste preference!
Do you have any tips for making these keto frozen yogurt covered blueberries?
This is an easy recipe, but I do have some tips so your yogurt covered blueberries will come out beautifully! First, you’ll want to line your baking sheets with parchment paper. Also, make sure you have some level spots in your freezer to place your baking sheets.😉Then wash your blueberries and set them out to dry while you prepare the yogurt mixture. I find the best way to make these treats is to use a toothpick to dip each blueberry into the yogurt mixture. Swirl the blueberry in the mixture until it’s fully covered. I then use another toothpick to carefully remove the blueberry from the other toothpick and onto the parchment lined baking sheets. This is not, and I repeat, not a fast process when making 2 cups of blueberries! But it’s worth it!
Using the amounts of blueberries and yogurt I listed in the ingredients, I had the perfect amount of yogurt to cover my blueberries. Depending on how thick you coat your berries and how big your berries are, you may have a little extra yogurt mixture. If you run out, you can always make a little more yogurt mixture. You will want to let your yogurt covered blueberries freeze for at least an hour before serving.
