Keto Green Bean Hamburger Soup
This keto green bean hamburger soup is comfort food in a bowl! It's an amazingly filling and flavorful soup!
Ingredients
- 1½ pounds ground beef
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 bell pepper, diced
- ¼ cup diced onion
- 4 cups chicken broth
- 1 (28 ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon granulated sugar substitute (Swerve)
- 1 tablespoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (12 ounce ) bag frozen Italian cut green beans
Instructions
1. In a large skillet over medium high heat, cook ground beef until meat is no longer pink, breaking it up into small pieces as it cooks. When ground beef is done, drain the grease.
2. While beef is cooking, in a large stockpot, over medium heat, add butter and olive oil. Once butter is melted, add peppers and onion. Saute until vegetables start to soften, 5-7 minutes.
3. To stockpot, add ground beef, chicken broth, diced tomatoes, tomato paste, keto sugar, Italian seasoning, salt, and pepper.
4. Bring to a boil over high heat. Decrease heat to medium and simmer for 10 minutes.
5. Add green beans. Simmer for 7-8 minutes, or until beans are tender.
