Ingredients
- 2 pounds fresh green beans
- 2 tablespoons butter
- 2 tablespoons olive oil
- ½ small onion, diced
- 4 garlic cloves, minced
- 1 (14.5 ounce) can petite diced tomatoes, undrained
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
1. Boil or steam green beans until fork tender. Drain well.
2. While beans are cooking, in a large skillet, over medium heat, saute onions in butter and olive oil for 5 minutes, or until softened. Add garlic during last minute.
3. Add diced tomatoes, lemon juice, oregano, sugar, salt, and pepper. Stir to combine. Bring to a boil over medium high heat. Decrease heat and simmer for 10 minutes.
