This is a great dish to use up some leftover ham. I had cooked a bone in ham, used the ham bone to make soup, then used some of the leftover meat for this ham salad. The meat from either a boneless or bone in ham would work for this salad. You have a couple of choices on how to prepare your ham for this salad. You can use a food processor to finely mince your ham. This is the traditional consistency for ham salad. Just pulse in the food processor until your meat has a crumbly minced texture. Alternately, you can also chop your ham just using a knife. This takes more time, and you’ll likely end up with larger pieces. Some people prefer using larger pieces for their ham salad. I’ve tried both methods and I prefer using a food processor.
What other ingredients go into this keto ham salad?
Although ham is the star of this dish, it needs a bit of help to turn it into a scrumptious ham salad. To our minced ham, we add chopped pickles, finely diced celery and onion, and finely chopped hard boiled eggs. The pickles, celery, and onion give this ham salad a nice crunch. I finely diced my celery and onion; but if you’d prefer, you can dice yours into larger pieces. When I make a large batch of hard-boiled eggs, I usually boil the eggs on the stove. But for smaller batches, I love to use my Dash rapid egg cooker. It is quick and easy to use and turns out perfect hard-boiled eggs. For our dressing, we combine keto mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Every ham has a different level of saltiness, so I recommend tasting your ham salad and adding salt and pepper to taste.

Ingredients
- 4 cups diced ham
- ¼ cup chopped pickles
- ¼ cup finely diced celery
- 2 tablespoons finely diced onion
- 2 hard boiled eggs, finely chopped
- 1 cup keto mayonnaise
- 1 tablespoon Dijon mustard
- ¼ teaspoon garlic powder
- Salt and pepper to taste
Instructions
1. In a food processor, pulse ham until finely minced, Place in a large mixing bowl. Add pickles, celery, onion, and eggs. Stir to combine ingredients. Set aside.
2. In a small mixing bowl, add mayonnaise, mustard, and garlic powder. Stir to combine.
3. Pour dressing over ham mixture. Stir to completely combine ingredients. Salt and pepper to taste.
4. Serve immediately or store in the refrigerator, in a covered container, until ready to serve.
