Ingredients
- 2 pounds ground beef
- ½ cup diced green peppers
- ½ cup diced red peppers
- ½ cup diced yellow onion
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 (28 ounce) can diced tomatoes
- 8 cups vegetable broth
- 2 tablespoons tomato paste
- 1 tablespoon tamari
- 1 teaspoon parsley
- ½ teaspoon basil
- ½ teaspoon garlic powder
- ½ teaspoon oregano
- 10 ounces cauliflower, chopped
- 10 ounces green beans, chopped
- 2 medium zucchinis, chopped
Instructions
1. In a large skillet over medium high heat, add ground beef, green peppers, red peppers, onion, salt, and pepper. Cook until meat is no longer pink, breaking it up into small pieces as it cooks. When ground beef is done, drain the fat.
2. In a large stockpot, add ground beef mixture, diced tomatoes, vegetable broth, tomato paste, tamari, parsley, basil, garlic powder, and oregano. Stir to combine ingredients.
3. Add cauliflower, green beans, and zucchini. Stir to combine.
4. Over high heat, bring mixture to a boil. Decrease heat to medium and simmer for 30-35 minutes, or until vegetables are tender.
