Let’s talk about focaccia bread!
Focaccia bread is an Italian flatbread. Its origins have been attributed to the Etruscans or possibly to Liguria, a region in Northwest Italy. Throughout Italy, one thing that’s certain is that is that focaccia has many regional variations, including different ingredients and toppings. The Latin name for focaccia bread is panis focacius, which translates to hearth bread, as that’s how this bread was originally baked. This brings wonderful images to my mind and makes me think of family, tradition, and true comfort food. Focaccia is a no knead bread which is soft and airy on the inside, with tops and edges that are golden brown. The earliest focaccia was unleavened which later was leavened with yeast. For this bread, we’re using baking powder as our leavening agent. Focaccia is made with simple ingredients and is flavored with salt and olive oil, and often with rosemary or other Italian seasonings.

What ingredients go into this keto Italian focaccia bread?
For our dry ingredients, we combine almond flour, Italian seasoning, baking powder, garlic powder, onion powder, and salt. The almond flour for this bread helps to ensure it will be low in carbs but flavorful. It also helps to create a light and airy texture. This dish is aptly named Italian focaccia bread due to the nice amount of Italian seasoning we add to it. Although many focaccia breads are made with yeast, I prefer using baking powder as the leavening agent. We also add both garlic and onion powder along with salt to create an amazingly seasoned bread. For our wet ingredients, we simply combine eggs and olive oil, but this combination helps to create the perfect texture for this bread. I love experimenting with olive oils from all around the world, but my go-to olive oil is Kirkland’s organic olive oil.

What are some ways I can serve this keto Italian focaccia bread?
You have some great options for serving this bread! It’s a nice appetizer bread choice. I think this bread is even better topped with a little pat of butter. You can also combine olive oil, balsamic vinegar, and your favorite seasonings then dip your focaccia in it. If you’d like a touch of heat, you can add red pepper flakes to your dipping oil. You can add this bread to a meat and cheese platter or to a charcuterie board. This bread is a perfect side for all kinds of meals. It pairs nicely with meats and with keto casseroles. It’s also a fun option to serve with your bacon and eggs! It also makes great sandwich bread! This bread is an excellent addition served with soups, chilis, and stews! You can cut your focaccia into squares of rectangles or just tear off a piece and eat it that way.
