We combine keto brown sugar with chili powder, salt, pepper, garlic powder, onion powder, and oregano to create the spice rub for our chicken. I love making my own spice mixtures, because when I make my own, I can be assured there are no unnecessary added ingredients and that all ingredients are keto and low carb. When making your own spice mixtures, you can also customize them to make sure they have the perfect salty and sweet elements for your flavor preferences. For my brown sugar, I used the Swerve brand. It contains zero calories and zero net carbs and is impressively similar in its sweetness level to regular sugar. This is a mild spice mix. If you’d like to add some heat, you can add some red pepper flakes to your mix.

It’s quick and easy to make keto gravy using the drippings from this chicken. The result is an amazingly flavorful and low carb gravy. I strained the fat from my drippings using a fat separator, but you can just let the drippings set for a few minutes and use a spoon to skim off the fat. You’ll want to melt 4 tablespoons of butter in a medium skillet over medium high heat. We’re using xanthan gum as our thickener. Once your butter is melted, briskly whisk in 1 teaspoon of xanthan gum. Then add your strained drippings and enough chicken broth to equal two cups of liquids. After straining my drippings, I ended up with one cup of liquid, so I added one cup of chicken broth. At this point, crank up your heat to high, bring the mixture to a boil and cook it for one minute, whisking frequently.

Ingredients
- Avocado oil spray
- 2 teaspoons brown sugar substitute (Swerve)
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon oregano
- 8 bone-in skin on chicken thighs
- ¼ cup key lime juice
- 1 stick butter, cut into 1 tablespoon pieces
Instructions
1. Pre-heat oven to 400 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a small mixing bowl, add brown sugar, chili powder, salt, pepper, garlic powder, onion powder, and oregano. Stir to combine.
3. Sprinkle 1 tablespoon of seasoning over bottom of baking dish.
4. Place chicken thighs in baking dish, skin side up, pressing down to season bottom of chicken.
5. Sprinkle key lime juice evenly over chicken.
6. Top chicken pieces evenly with remaining seasoning.
7. Place 1 tablespoon of butter on each piece of chicken.
8. Bake, uncovered, for 35-45 minutes or until internal temperature of chicken reaches 165 degrees.
