A fun thing about radishes is that they can be eaten raw or cooked, but cooking radishes usually takes much of their strong bite away. There are numerous varieties of radishes which vary in color, flavor, and size. I used a combination of red radishes and Easter egg radishes. Easter egg radishes contain a combination of red, pink, purple, and white radishes. They taste similar to red radishes. Since radishes have a high water content, after grating them, you’ll want to squeeze out as much water from them as possible.

This is a filling dish you can serve for breakfast, brunch, lunch, or dinner. It is a satisfying dish that is a complete meal served all on its own. You can use your favorite keto gravy for this hash; but making homemade keto gravy is quick and easy and will rival all others in both taste and texture! I used keto chicken gravy for my hash. In a medium skillet, over medium high heat, melt 4 tablespoons of butter. Add 1 teaspoon of xanthan gum and ½ teaspoon of garlic powder. The xanthan gum is the thickener for our gravy. Whisk these with the butter. Then add 2 cups of chicken broth and 1 teaspoon of tamari. Increase your heat to high and bring your mixture to a boil, whisking the gravy frequently. Boil the mixture for 1 minute and it’s ready to serve! This will make more gravy than what is called for in our hash, so you might want to make some mashed cauliflower, kohlrabi, or turnips to use up the rest of your gravy!😊

Keto Leftover Turkey Hash
This keto leftover turkey hash is an awesome and delicious way to use up some leftover turkey. This makes for a perfect breakfast, brunch, lunch, or dinner option!
Ingredients
- 4 slices bacon
- ½ cup diced green peppers
- ½ cup diced red peppers
- ¼ cup diced onion
- 8 ounces radishes
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 3 cups cooked and chopped turkey
- 1 cup keto gravy
- 4 eggs, fried or poached
Instructions
1. In a large skillet, over medium high heat, fry bacon until crisp. Remove bacon to a plate and crumble. Do not drain bacon grease.
2. Add peppers and onion to bacon grease. Over medium high heat, saute until vegetables just start to soften, 3-4 minutes.
3. Grate radishes. Squeeze out as much liquid from radishes as possible. Add radishes to peppers and onions.
4. Add garlic powder, paprika, salt, and pepper. Stir to combine. Saute for 5 minutes, stirring occasionally.
5. Add turkey and gravy. Stir to combine. Saute until mixture is heated through.
6. Serve immediately, topping each portion with a fried or poached egg.
