I love vegetables! And being on a low carb keto diet most certainly does NOT mean that you can’t have veggies. You can’t have every kind of vegetable; but there are a great number of them that you can include in your diet. Cauliflower is a great keto vegetable and this keto loaded buffalo cauliflower casserole will please your entire family! It is simple enough to serve any time you’d like, and it is special enough to serve for get togethers and holiday meals.
I have a cauliflower warning!😊
Many people find that when they use cauliflower, especially in a casserole, the casserole turns out watery. This happens because as cauliflower cooks, it releases water. Some will try to keep cooking or roasting thinking it will dry the cauliflower out. Sadly, when overcooked, the poor little cauliflower will release even more water and will also get mushy. So, the moral of the story is, don’t overcook your cauliflower. But if your dishes do turn out watery, just drain the excess liquid.
Let’s talk cauliflower!
Cauliflower is a great vegetable choice to include in a keto diet. 1 cup of cauliflower has about 30 calories and only 2 grams of carbs! It can be prepared in any number of ways. You can quickly cook it on the stove, in the microwave, or in a steamer. It can be riced and served in some of your favorite dishes such as chicken fried cauliflower rice, Spanish cauliflower rice, or cilantro lime cauliflower rice. It can be mashed with butter and heavy cream or used in a loaded mashed cauliflower casserole. When using cauliflower, let your imagination run wild and have fun with your recipes.
Helpful Hints:
*Don’t overcook your cauliflower or you could have a watery casserole.
