Let’s talk about our coleslaw mix!
While I love making dishes from scratch, there are also some shortcuts to cooking that I use from time to time that come in quite handy. One of my favorites is using bagged coleslaw mixes. Most coleslaw mixes contain chopped green and red cabbage and shredded carrots. And while I typically avoid carrots because of their carb count, the amount added to coleslaw mixes is incredibly small, so the carb count of coleslaw mixes remains low. I also enjoy making my own coleslaw mix! When I make my own, I combine approximately 5 cups of chopped green cabbage with 1 cup of chopped red cabbage. I usually add 2-4 tablespoons of grated carrots to my coleslaw mix because I love the color and flavor this brings. For this coleslaw, we’re adding coarsely chopped walnuts which brings amazing flavor and texture to our dish!
How do I make the dressing for this keto maple walnut coleslaw?
The dressing for this coleslaw is incredibly quick and easy to make and is also incredibly delicious! To make our dressing, we combine keto mayonnaise, sour cream, apple cider vinegar, Dijon mustard, keto maple syrup, celery seed, salt, and pepper. I used the Chosen Foods brand avocado oil mayonnaise to make this dish. When buying mayonnaise, you’ll want to make sure there is no added sugar or other ingredients you don’t want in your mayo. Another option is to make homemade mayonnaise and it’s incredibly easy to make! I used Dijon mustard to make this dressing, but you can use yellow mustard or even spicy brown mustard to make yours. To make this dressing, we simply add all of our dressing ingredients to a small mixing bowl, then stir to combine.
