After sauteing the mushrooms for 10-12 minutes, or until they’re nicely browned, we add our garlic and saute it for about a minute. We do this because garlic tends to burn easily and only takes a short time to brown and release its amazing flavor.

I love mascarpone cheese, but if you can’t get your hands on it, you can substitute with softened cream cheese. Taste wise, mascarpone has a mildly sweet and subtle buttery, nutty taste, while cream cheese has a more tangy element to it. The sour cream adds awesome flavor and creaminess. For your cheese, I recommend buying a block of Parmesan cheese and grating it yourself as this melts the best. A little salt and pepper finish our sauce. You can give your sauce a taste and add more salt if you’d like.

Keto Mascarpone Garlic Mushrooms
These keto mascarpone garlic mushrooms are a perfect side for any meal! This is a rich, creamy, and amazingly delicious dish!
Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 16 ounces whole mushrooms
- 4 garlic cloves, minced
- ¼ cup heavy whipping cream
- ¼ cup mascarpone cheese
- ¼ cup sour cream
- ½ cup fresh grated Parmesan
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large skillet, over medium high heat, add butter and olive oil. Once butter is melted, add mushrooms.
2. Saute for 10-12 minutes, stirring frequently. Add garlic during last minute. Remove mushrooms and garlic to a serving bowl.
3. In a small mixing bowl, add heavy whipping cream, mascarpone cheese, and sour cream. Stir to combine ingredients. Add Parmesan, salt, and pepper. Stir to combine.
4. Add mascarpone mixture to skillet. Bring to a boil over medium high heat, stirring frequently.
5. Once sauce is smooth and cheeses are melted, pour sauce over mushrooms and toss to coat mushrooms in sauce.
