This keto Mediterranean chicken salad is a fun and delicious chicken salad variation. We add some awesome traditional Mediterranean ingredients, herbs, and spices to create a chicken salad that will be a terrific addition to your salad recipe collection. I cooked a whole chicken and used a combination of white and dark meat for my chicken salad. You can use all white or all dark meat if you’d prefer. A quick, easy, and delicious option is to use a rotisserie chicken to make this salad. I like the consistency of using chopped chicken for this salad; but if you’d like, you could also use shredded chicken. To our chicken we add diced celery, red onion, and red pepper. These add a nice crunch to our salad. They also add great flavor and color! You can substitute with some diced green pepper if you’d prefer or can use a combination of green and red peppers. For my chicken salad, I added sliced black olives because my family loves them. If you’d rather, you can use Kalamata or even green olives for your chicken salad.
How do I make the dressing for this keto Mediterranean chicken salad?
The dressing for our chicken salad comes together quickly, but results in a creamy and delicious dressing! We start with keto mayonnaise and sour cream for the base of our dressing. This helps to create a rich and creamy dressing. To this we add lemon juice, keto granulated sugar, dried oregano, parsley, and dill. I like to always have a lemon or two on hand because I love fresh lemon juice; but you can use bottled juice as well. For my sugar, I used the Swerve brand. It is similar in its sweetness level to regular sugar and contains zero calories and zero net carbs. For seasoning, we add garlic powder, salt, and pepper. You can always give your salad a taste and add more salt and pepper if you’d like.
How can I serve keto Mediterranean Chicken Salad?
You have some wonderful low carb options for serving this salad. I topped ours with some crumbled feta cheese to add even more Mediterranean flavor to the dish! This salad is delicious just served as is in a bowl! If you’d like to serve this as a sandwich, you can use your favorite keto bread, biscuits, or English muffins. It can also be used to make a lettuce wrap. You can serve this chicken salad atop some lettuce or spinach as well. Another great option is to serve this as a dip. For dippers, you can use raw veggies such as broccoli, cauliflower, celery, cucumbers, or sliced bell peppers or radishes. You can also serve this salad with cheese whisps, pork rinds, or keto crackers.

Ingredients
- 4 cups cooked and chopped chicken
- 2 celery stalks, chopped
- 2 tablespoons diced red onion
- 2 tablespoons diced red peppers
- 10 black olives, sliced
- ½ cup keto mayonnaise
- ⅓ cup sour cream
- 1 tablespoon fresh lemon juice
- 2 teaspoons granulated sugar substitute (Swerve)
- 1 teaspoon oregano
- 1 teaspoon parsley
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Optional: top with crumbled feta cheese
Instructions
1. In a large mixing bowl, add chicken, celery, onion, red peppers, and olives. Stir to combine ingredients. Set aside.
2. In a small mixing bowl, add mayonnaise, sour cream, lemon juice, sugar, oregano, parsley, dill, garlic powder, salt, and pepper. Stir to combine.
3. Pour mayonnaise mixture over chicken mixture. Stir to completely combine.
4. Top with crumbled feta cheese, if desired.
