This keto Mexican beef and green bean casserole is true comfort food! We combine ground beef and green beans in an incredibly cheesy and flavorful sauce. Then we top our casserole with even more cheese. Yum!

I absolutely love this casserole, and it’s so easy to make! It contains some simple but delicious ingredients which really make it shine! For the ground meat, I used a 93% lean ground beef mixture. Alternately, you can use an 80% mixture if you’d like. You’ll just want to make sure you drain the grease so you don’t end up with a greasy casserole. Another great option is to use ground turkey. To our ground meat, we simply add a little salt and pepper. I love using fresh green beans in dishes, and they would work perfectly for this casserole. When I made this dish, however, I didn’t have any fresh green beans, so I used some frozen Italian cut green beans. You can steam or boil your beans. If you boil them, you will want to drain them well so that your casserole doesn’t turn out watery.
How do I make the sauce for this keto Mexican beef and green bean casserole?
The sauce for this casserole is rich, creamy, cheesy, and incredibly flavorful. To the same skillet we cooked our ground beef in, we start with adding softened cream cheese, Rotel diced tomatoes and chilies, heavy whipping cream, sour cream, chili powder, garlic powder, and onion powder. I used regular Rotel, which has a mild spice level. If you’d prefer, you can use mild Rotel. If you want add some extra heat, you can use hot Rotel diced tomatoes and green chilies. Whichever you use, you’ll want to drain the liquid before adding to the skillet. You can discard the liquid or save it for your next batch of homemade salsa! After heating the sauce until the cream cheese is completely melted, we add 1 cup of shredded cheese. I used sharp cheddar cheese, but you can use any good melting cheese for your casserole.

Ingredients
- Avocado oil spray
- 1 pound ground beef
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 ounces fresh or frozen green beans
- 4 ounces cream cheese
- 1 (10 ounce) can Rotel diced tomatoes & green chilies, drained
- ¼ cup heavy whipping cream
- ¼ cup sour cream
- ½ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1½ cups shredded sharp cheddar cheese
Instructions
1. Pre-heat oven to 350 degrees. Spray an 8x8 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet, over medium high heat, brown ground beef with salt and pepper until beef is no longer pink.
3. Drain grease from ground beef. Add ground beef to prepared baking dish.
4. While ground beef is cooking, steam or cook green beans to desired crispness level. Add beans to ground beef.
5. In same large skillet, add cream cheese, Rotel tomatoes and chilies, heavy whipping cream, sour cream, chili powder, garlic powder, and onion powder.
6. Cook over medium heat until cream cheese is melted, stirring occasionally. Add 1 cup shredded cheese and stir until cheese is melted.
7. Pour sauce over ground beef and green beans. Stir to combine. Top evenly with remaining ½ cup shredded cheese.
8. Bake for 30 minutes or until heated through. Let set for 5 minutes before serving.
