I generally like to make most things from scratch, but I also love the convenience of bagged coleslaw mixes! These mixes most often combine green and red cabbage with some grated carrots. If you make your own mix, you can either chop or shred your cabbage, depending on the texture you prefer. You can also choose how much green and red cabbage and carrots you add to your mix. If you’d like to change things up, you could add some chopped broccoli, chopped or sliced radishes, diced bell peppers, diced onions, shredded Brussels sprouts, or shredded kohlrabi. You could also add some chopped or shredded Napa or savoy cabbage.

Some great options include colby, gouda, gruyere, havarti, Monterey jack, provolone, and Swiss cheese. I do recommend you buy a block of cheese and shred it yourself. We also add chopped green onions to this coleslaw. You could use diced red onions if you’d prefer.

We make a rich and creamy dressing for this coleslaw. The creamy base is a combination of mayonnaise and sour cream. When buying mayonnaise, you’ll want to check ingredients to make sure there is no added sugar or oils you don’t want. You can also easily make homemade mayonnaise! Fresh lime juice brings a little tang to our dressing and keto sugar brings a touch of sweetness! If you’d like, you can use bottled lime juice in place of the fresh. For seasoning, we add chili powder, cumin, salt, and pepper. You can always add more keto sugar or more salt to your dressing to suit your taste preference. As written, this is a mild dressing. If you’d like to add some heat to your dressing, you can add some cayenne pepper or a few dashes of hot sauce.

Ingredients
- 16 ounce bag coleslaw mix
- 2 cups cooked, chopped chicken
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- ½ cup keto mayonnaise
- ½ cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
