I especially love using orange cauliflower to make cauliflower mac and cheese because the color of the finished dish is amazing! Cauliflower is delicious served both raw and cooked. It’s great raw, served with keto ranch or keto veggie dip. Another great thing about cauliflower is the variety of ways you can prepare and serve it. You can boil, grill, roast, or steam cauliflower. It can be served as a side dish or can be added to casseroles and soups. Another awesome way to serve cauliflower is to rice it and use it in place of regular rice.
How do I make this keto microwave whole cauliflower?
This is a quick and easy dish to make, but there are a few things you can do to ensure yours turns out perfectly! You’ll want to remove the leaves from your cauliflower and trim down the stem so it will set level. Then you’ll want to add a little water to your dish. I recommend covering your cauliflower with plastic wrap, so it will steam while you microwave it. Then, I make the coating for this dish while the cauliflower is cooking. I used shredded cheddar cheese for my dish, but alternately you can use any good melting cheese. Also, you can substitute with a little fresh minced garlic in place of the garlic powder if you’d like. I microwave my cauliflower just until it’s fork tender. That’s because after we coat it with our topping, we’ll be microwaving it an additional 2-3 minutes to completely melt the cheese.

Keto Microwave Whole Cauliflower
This keto microwave whole cauliflower is one of my favorite dishes! It’s a quick, easy, and amazingly flavorful side that will get rave reviews every time you serve it!
Ingredients
- 1 medium head cauliflower
- ¼ cup water
- ½ cup keto mayonnaise
- ½ cup shredded cheddar cheese
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Add cauliflower and water to a microwave safe dish. Cover with plastic wrap. Microwave for 8-10 minutes, or until cauliflower is just fork tender.
2. While cauliflower is cooking, add remaining ingredients to a small mixing bowl. Stir to combine.
3. Once cauliflower is just fork tender, drain water and allow cauliflower to cool slightly. Pat dry. Coat cauliflower evenly with mayonnaise mixture.
4. Microwave for 2-3 minutes, uncovered, until cheese is melted.
