With just five ingredients and a few minutes of preparation, you can have a delicious and low carb pizza sauce. I like to make the sauce first and let the flavors combine while I make the chaffles. Since the last step of this recipe includes broiling the pizzas, there is no need to heat the sauce beforehand.
What are chaffles?
The most basic chaffles contain just cheese and eggs, and they are usually made in a mini waffle iron. So chaffles are cheese waffles! There is an incredible amount of options for making chaffles and for how you use them! Chaffles can be savory or sweet. I like the texture of chaffles when a bit of almond flour and baking powder is added to the eggs and cheese. Adding spices can make for fun change ups in the flavor of chaffles. The addition of cream cheese or baking ingredients can make for some awesome sweet chaffles. I like to use cut up chaffles as croutons and I can’t wait to create an incredible chaffle stuffing to go with my Thanksgiving turkey this year. Don’t worry! You can absolutely change the toppings for these pizza chaffles. For my pizzas, I made two using mozzarella cheese as a topping and the other two using cheddar jack cheese. You can substitute whatever cheese you like on your pizza or use a combination of cheeses. You could use regular sized pepperonis or could use a different meat altogether. Canadian bacon, cooked sausage, or even chicken would be fun options for these keto pizza chaffles. You can add any vegetables you’d like for these pizzas as well. How about some mushrooms, peppers, or black olives for yours? And since this recipe makes four pizzas, you can individualize each to have four completely different pizzas! Keto Mini Pepperoni Pizza Chaffles
These keto mini pepperoni pizza chaffles are adorable, fun, and delicious! They may become one of your new family traditions!
Ingredients
For the pizza sauce:
- 2 tablespoons tomato paste
- 6 tablespoons warm water
- 1 teaspoon Italian seasoning
- ⅛ teaspoon garlic powder
- ⅛ teaspoon granulated sugar substitute (Swerve)
For the chaffles:
- 2 eggs
- ¼ cup almond flour
- ½ teaspoon baking powder
- 1 cup shredded mozzarella cheese
- Avocado oil spray
For the pizzas:
- ½ cup shredded cheese
- 4 ounces mini pepperoni pieces
Instructions
For the pizza sauce:
1. In a small mixing bowl, combine all sauce ingredients. Stir or whisk until completely combined. Set aside.
For the chaffles:
1. Plug in mini waffle maker to heat.
2. In a medium sized bowl, add eggs and beat lightly.
3. Add almond flour and baking powder. Stir until completely combined. Add mozzarella cheese and stir until combined.
4. When waffle maker is hot, spray top and bottom surfaces with avocado oil. Add ¼ of chaffle batter to waffle maker. Close cover and heat for 4 minutes or until browned.
6. Remove chaffle and set aside. Repeat process of spraying with avocado oil and heating chaffles until all batter is used. This recipe makes four chaffles.
7. When making your last chaffle, turn oven on to broil.
For the pizzas:
1. Line an 8x8 or 11x9 inch oven safe pan with foil. Place chaffles in pan.
2. Spread pizza sauce on chaffles, evenly distributing sauce among chaffles.
3. Sprinkle 2 tablespoons of shredded cheese on each chaffle. Top each chaffle with one ounce of mini pepperoni pieces.
4. Broil pizzas for 2-3 minutes, or until cheese is melted.
5. Serve immediately.
