Is it difficult to make the salami cups?
You will be amazed at how easy it is to make this appetizer! I think using the 2 ½ inch diameter salami and mini muffin tins makes the perfect size appetizer. You don’t have to grease the tins. The salami greases the tin for you! Press the salami into the muffin tin. They won’t fit exactly, and you’ll see some ridges form when you press the salami in. Don’t worry! This just makes the end result prettier. Placing a small ball of tin foil in each salami cup ensures the salami will behave and stay put in the cup. Mine took 10 minutes, but you should start checking at the 8-minute mark. You want these crispy, but not burnt. They come out greasy, so I recommend flipping them upside down on paper towels to allow a little of the grease to drain. Yep, it’s that easy!

I made a simple creamy dip to fill my salami cups. Softened cream cheese is combined with sour cream, garlic powder, Italian seasoning, and onion powder. That is why this dip works so well with the salami cups. I love the look, taste, and texture of the added sprinkled chives on top. I used dry chives for this recipe. If you’d like, you could substitute finely chopped green onions instead.

I had made a keto antipasto salad right before I made these appetizers. My husband, Brian, had some of his friends up to work on a classic car he’s restoring. My kids and I were planning on making them a big barbecue dinner, so we decided to make them a large snack platter for lunch. I chopped up the antipasto salad into smaller pieces and filled some salami cups with them. They were the hit of the lunch! My next plan is to fill some with spinach artichoke dip. Ingredients
- 16 slices salami (2½ inch diameter)
- 3 ounces cream cheese, softened
- 3 tablespoons sour cream
- ⅛ teaspoon garlic powder
- ⅛ teaspoon Italian seasoning
- ⅛ teaspoon onion powder
- ½ teaspoon chives
Instructions
1. Pre-heat oven to 350 degrees.
2. Place one slice of salami into each miniature muffin tin cup. Press the salami into the cups.
3. Tear aluminum foil and make 16 small foil balls. Place one ball on top of each slice of salami.
4. Bake for 8-10 minutes or until salami is crispy. Let salami cool for a few minutes. Discard foil. Remove salami cups and turn upside down on paper towels to allow grease to drain. Allow salami to cool completely.
5. In a small mixing bowl, add cream cheese, sour cream, garlic powder, Italian seasoning, and onion powder. Stir or beat with an electric mixer until mixture is combined and smooth.
6. Fill salami cups with cream cheese mixture, dividing equally between cups.
7. Sprinkle with chives. Serve immediately or store, covered, in the refrigerator until ready to serve.
